Mini Butter Cakes with Berry Sauce

  • 3 cups all-purpose flour
  • 2 cups sugar
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon nutmeg 
  • 1 cup buttermilk
  • 1 cup Irish Butter, at room temperature 
  • 2 teaspoons Bourbon Vanilla Extract
  • 4 eggs
  • Sauce
  • 3/4 cup white sugar
  • 1/2 cup of blueberry jam
  • 1/2 cup of rasberry jam
  • 5 tablespoons of confectioners sugar
    1. Combine all ingredients in a mixer or bowl.
    2. Mix until the batter is smooth. 
    3. Add a tablespoon of butter to several ramekins.
    4. Bake at 350, for 50 mins or until a knife inserted in the middle comes out clean.
    5. While the cakes bake, combine 1/2 cup of blueberry preserve and 1/2 cup of rasberry jam, and 5 tablespoon of confectioners sugar.
    6. When the cakes are done, remove from the oven and allow them to cool. Once they are cool you can pour the berry sauce on each one.
    7. Feel free to add fresh fruit.
