1 acorn squash
2 tablespoons dark brown sugar
2 tablespoons of ginger wine
3 tablespoons of butter
1 teaspoon of cinnamon
1 teaspoon ground ginger
1 teaspoon ground cloves
1/4 cup of cranberries
Prepare the squash by slicing and peeling the skin off of each slice with a vegetable peeler .
Add the squash to a bowl and add the spices,sugar, and ginger wine.
Rub the squash with the spices and then place the squash in a baking dish.
Add the butter and cranberries.
Bake on 400°F for 2o mins, or until the squash is tender.
This makes a great side dish, or dessert. You could serve the squash with ice cream and pound cake, or blend with vanilla ice cream and walnuts. If you are going to blend and make a shake, do not add butter, when you bake the squash. Enjoy!
