Hey guys, this is a really simple, fresh and healthy meal. It all began when I realized that I had alot of farro in my cupboard. Farro is an ancient wheat grain that’s very similar to my other favorite grain, barley. To make farro you have to boil the grains until they are tender, then let them cool before you begin to put the salad together .
When the farro has cooled, drizzle some raw apple cider vinegar over it. Then add chopped green apples, cranberries, cashews, almonds, and walnuts . Before mixing the ingredients together add 2 tsps of salt, and a dash of black pepper. Also, add 2 tablespoons of ranch dressing. Finally, mix the salad and let it sit in the refrigerator for a few minutes.
Now, it’s time to oven fry your Cod.
Take a piece of cod and season it with cayenne pepper, seasoned salt, and a lemon & pepper all purpose seasoning. Then cut the cod into small, or big portions. Throw the pieces into a zip lock bag with 2 cups of flour, 1/2 cup of cornmeal, 1 tablespoon of cayenne pepper, and 2 tsps of salt. Shake the bag until each piece is coated. Finally place the fish on a baking sheet with a few tablespoons of coconut oil, or olive oil, and bake at 350 until golden brown.
The seasoning for the cod will vary depending on how much fish you intend to make. Adjust the seasoning to suit your needs.
Please give this recipe a try and have fun with it. Feel free to add, or subtract ingredients in the farro salad. If you want, add tuna or salmon, and forget the cod, or instead of apple cider vinegar, use balsamic vinegar and italian dressing. The possibilities are endless.
