Thin Crust Chicken and Mushroom Pizza

Prepare the dough by combing 2 cups of Flour, 1/2 Cup of water, 3 tablespoons of ground flax seeds, 1 tablespoon of oil (olive, almond, coconut or vegetable oil) and 1 teaspoon salt. When the dough forms, divide it into 2 balls and roll out each ball until it is paper thin.

 

Brush the top of one of the pizzas with tomato sauce and top with chicken, mushrooms, cheddar cheese, mozzarella, or smoked gouda. For the chicken you could buy chicken thighs and cook them yourself, or you could buy Tyson breaded chicken, or  rotisserie chicken. In any case you will need chicken that is sliced, or shredded.

Before placing in the oven sprinkle oregano and basil over the top. Fresh basil would be ideal, but dried can work as well. Also, I recommend placing the pizza directly on the oven rack.

Bake at 375 for 20 mins, or until the edges start to brown.

The second pizza is the same as the first, but this time instead of tomato sauce I made a creamy blue cheese sauce.

To make the sauce melt 1/2 cup of blue cheese. Add 1 teaspoon of oregano and basil. Then add 1 tablespoon of pesto. Use a hand mixture to whip the ingredients together. Finally follow the directions mentioned above, but this time brush the blue cheese sauce on the pizza first.

If you prefer no meat you could make the same dough and add mushrooms, peppers, tomatoes, pineapple, broccoli, or whatever veggies you prefer. You could also brown a few pieces of tofu with black pepper and salt and add as a topping. The options are endless.
