Vanilla Berry Delight


If you like vanilla cake and berries this cake is for you.  It’s filled with fresh vanilla bean extract and has a bottom layer that has strawberries , blueberries, black berries, and raspberries.

This cake is very easy to make. If already have a favorite vanilla cake recipe feel free to follow it, or if you prefer to use a box cake recipe that’s fine aswell. I’ll include my recipe below. For my recipe I extracted the seeds from vanilla beans because the flavor is more intense, and sooooo much better.

After preparing your cake mixture it’s time to wash your berries and grab your brown sugar and butter. Coat the bottom of the baking pan with butter and brown sugar. Use enough of each to cover the bottom of the pan. Then add the berries and pour the vanilla cake batter on top. Place the cake in the oven at 350 for 25 to 30 mins, or follow your recipe for vanilla cake or the one on the box, if you’re using a box cake mix.

When the cake is done let it cool. Then you can try to flip it or you can cut it straight from your pan. Please keep in mind that if you are using a box cake mix it’s important that you bake the berry mixture for 5 to 15 mins at 350 because box mixes usually bake quickly .  Also, any vanilla cake recipe will create the same results.

There are so many different ways you can use this idea. Try adding pineapples and cherries, cranberries , apples and cinnamon , or just blueberries . Let me know if made any adjustments .  Enjoy!

Vanilla Cake(use a large pan or 2 pan)

  • ¾ cup unsalted butter
  • 1 1/2 cups sugar
  • 2 large eggs
  • 3 teaspoons vanilla extract
  • 1 vanilla bean
  • 2½ cups flour
  • 2½ teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup milk
  • ½ cup heavy cream
